香煎牛排(steak with caramelized onion and hotel butter)

这个方子是youtube上一个大厨分享的。一般的牛排做法是直接油煎。这次先油煎锁住水分再入烤箱烤出牛排的香味。加上caramelized onion的香味和hotel butter。比一般的牛排好吃太多了。牛排的肉质也很重要。家里一般做的就选rib eyes 或者iron。这两个的脂肪含量刚刚好。不会太腻,肉质又嫩。
用料
牛眼肉 | 一块 |
洋葱 | 半个 |
欧芹 | 少量 |
黄油 | |
海盐 | |
黑胡椒 |
香煎牛排(steak with caramelized onion and hotel butter)的做法
从冰箱取出牛排。用厨房纸吸干表面的黏液。两面都撒上海盐跟黑胡椒
热锅中加入橄榄油。第一面煎5分钟翻面。第二面煎2-3分钟后迅速取出放一边静置
洋葱切末。放入煎牛排的锅中中小火翻炒20分钟。要炒到洋葱里面的糖都焦糖化。洋葱应该呈焦糖色。关火放入小块黄油继续翻炒至黄油完全化开。把洋葱铺到牛排的表面(就是这么黑的洋葱没错)
烤箱预热460f(240c)烤7-8分钟
欧芹切末。于软化的黄油混合。摆在牛排上
小贴士
我做的时候旁边摆上了蒜香蘑菇很欧芹。摆盘比较好看。牛肉从冰箱取出一定要吸干黏液。这样有助于煎的时候表面形成漂亮的焦黄色。
煎牛排一定要用大火,不然会太老
牛眼肉是牛的背脊第七根到第十根肋骨之间的肉。
中国人对煎牛排有很多误区。好的牛排是不需要提前腌制的。很多人用红酒腌,以为这就是红酒牛排。其实根本不是。这样做出来的牛肉肉质会变。如果买不到好的牛排,可以用橄榄油黑胡椒提前腌制半个小时。也不用太久。牛排本来讲究的就是牛肉本身的香味。
